PRORESTO’25: Spring of Taste, Service and Inspiration in Odessa

On April 28, 2025, one of the most anticipated forums of the restaurant industry — PRORESTO’25 — took place at the Londonskaya Hotel in Odessa. The event brought together hundreds of HoReCa representatives from all over Ukraine — from chefs and baristas to owners of top chains. I had the honor of joining this incredible atmosphere as a speaker and member of the professional community that is shaping a new hospitality.

In my report “Future Service Trends: What Guests Expect and Employees Do Not Forgive,” I talked about how the needs of our guests are changing, why service today is not just an action, but a strategic resource, and what exactly cannot be ignored when working with a team.

PRORESTO is more than just a forum. This is a platform for exchanging ideas, experience, support and resources for everyone who creates the atmosphere of establishments: from chefs and waiters to restaurateurs and marketers. The program includes a mix of powerful solo performances and panel discussions, free communication, cocktail parties, tastings, meeting future partners and extensive networking.

The performances and topics of colleagues were especially impressive:

Leilya Tuvakliyeva - entrepreneur, Leilia bakery, podcast "Roaring and groaning restaurateur";

Andriy Dromov - brand chef and restaurateur, Truffle, "Kosmos";

Ilya Nepravda, Vlad Romanishyn, Yevgeny Komarov, Olga Mandebura, Dmitry Podoprigora, Dmitry Sobakar - each of them presented unique experience and powerful practical content.

PRORESTO’s mission is to unite, motivate and inspire, to create a culture of mutual support in the HoReCa sector and to help the community grow through dialogue and interaction. This is where ideas are born that turn Ukrainian hospitality into a real brand.

I am sincerely grateful to the organizers for the invitation, the extraordinary atmosphere and the high-quality program. I am glad that the Ukrainian School of Hospitality was part of this movement forward.
